Yuzu kosho is a quintessential Japanese chili paste that combines the mild heat of chili peppers with the iconic citrus flavors of yuzu.

Japan is home to over 40 different varieties of citrus fruit, but one is prized above all others:yuzu (柚子). From the outside, yuzu resembles a lemon with its bright yellow peel. However, the fruit is larger and squatter with a flavor best described as a cross between a tart lemon, a sweet mandarin orange, and a fragrant grapefruit. The fruit itself is rarely eaten raw, instead everything from its zest to its flesh can be found lending its flavors to many of Japan’s favorite foods, including this yuzu kosho from Oita Prefecture.

As there are only three ingredients in yuzu kosho (yuzu zest, chili peppers and salt), the quality of each ingredient truly matters. Here, the fresh, citrus zest of the yuzu fruit is combined with the hot spice of chili peppers and domestic rock salt from Nagasaki.

Oita Chitosemura Nousankakou is located in Bungo Ono City, in Oita Prefecture in Kyushu. The climate is temperate and perfect for growing fresh fruits and vegetables, including succulent, juicy citrus fruits, which have been cultivated in the area since ancient times.
